What is the Brix value and why is it that important?

Brix is a measurement of sugar content in the fruit or vegetable. Brix is measured in % and represents the total soluble solids (TSS) present. TSS includes sucrose, glucose, fructose, citric acid, malic acid and other sugars present in the juice.

For example, if you measure 12 brix in your sample means that 12% of your sample by weight is composed of sugars. A high Brix value indicates that there are more TSS per unit volume than a low Brix measurement.

Brix value is commonly used to indicate ripeness and sweetness of fruits and vegetables. The higher the brix the sweeter and more ripe it will be.

Other factors like variety, climatic factors, geographical location and agricultural practices also affect Brix values for a given crop.

A high brix value is especially important for crops like tomatoes where flavor is closely correlated to brix values.
